VIMS (formerly Sancho Motors) is a Miami-based company specializing in the design, manufacturing, and customization of vintage-inspired mobile food and beverage units. Founded in 2020 and headquartered in Dania Beach, Florida, VIMS serves entrepreneurs, hospitality brands, resort operators, and experiential retailers across the United States, Latin America, and the Caribbean.
We build mobile commercial units that combine the aesthetic of mid-century European design — Citroën HY vans, Italian piazzas, French bistros — with the functional standards of a modern commercial kitchen. Every unit is engineered to generate revenue from day one.

Our Story
VIMS was founded in 2020 by Gonzalo Sancho and Matias Pellegrini. Gonzalo, a third-generation car dealer, started the business as Sancho Motors of Miami — initially focused on classic cars. Recognizing a gap in the U.S. market for design-led mobile food and beverage units, the company pivoted into vintage-inspired concession trailers and rebranded as VIMS.
Matias Pellegrini joined as Co-Founder and CRO, bringing a background in commercial sales and brand development. Together, they built the company into the leading provider of vintage-inspired mobile units in the United States.
VIMS operates from a showroom and customization facility at 1920 Stirling Rd, Unit 1930, Dania Beach, FL 33004, with manufacturing operations and design development across Florida and New Jersey.
Since 2020, VIMS has delivered approximately 400 units to clients across the United States, Caribbean, and Latin America. Those clients have collectively generated over $100 million in revenue operating VIMS units.

Full-service customization. Every unit is built to your concept — color, branding, layout, equipment, finishes. You don’t buy a generic trailer. You build your brand.
Financing available. We work with Equinox Financing to offer financing options for qualified buyers. Production begins with a 50% deposit.
